Date Night at Home with Auricchio: Provolone Cheese

I love going to a nice restaurant at the weekend with the husband for ‘date night’. We’d probably class ourselves as ‘foodies’, we do love food! I’m not really very fussy either, my favourite meal would be Italian or Indian.

Being a mum of three means it’s not always easy to go out to a nice restaurant for a meal for date night as it can be tough arranging babysitters. So more often than not, we’ll have date night at home, make a nice meal and watch a good movie.

When the opportunity arose to work with Ciao Gusto, the Italian food and drinks brand, I jumped at the chance, it was perfect for our next date night. We both love cheese so I decided on a starter and main meal using Auricchio Provolone cheese.

A few days before our date night, I ordered all the ingredients including the cheese through Ocado via the Ciao Gusto shop. The shop brings together over 30 of Italy’s most popular brands which was fantastic and easy to find what I wanted.

Once the kids were in bed I started on our meal. I chose quite simple dishes as I didn’t want to spend most of the evening in the kitchen. I decided to make a Provolone Cheese, Walnut and Grape Dip for starter and Chicken with Provolone Cheese and Parma Ham.

Provolone Cheese, Walnut and Grape Dip:

Ingredients-

  • Chopped walnuts
  • Seedless grapes
  • Auricchio Provolone Cheese

I loved the look of this recipe as it was only three ingredients and it consists of melted cheese. Who doesn’t love dipping bread into melted cheese?

Firstly I chopped the grapes and walnuts into small pieces.

I placed the cheese into an oven proof dish before layering the walnuts and grapes.

I popped it in the oven on a medium heat for no longer than 10 minutes before browning it under the grill for a few minutes.

I served it with warm pita bread and it was delicious. The cheese melted well and was quite strong tasting, which I loved.

Chicken with Provolone Cheese and Parma Ham:

Ingredients-

  • 2 chicken breasts
  • Parma ham
  • Auricchio Provolone Cheese
  • Vegetables
  • Potatoes of choice

I began by searing the chicken over the hob for a few minutes before placing in an oven proof dish. I put it in the oven on a medium heat for 15 minutes.

Whilst the chicken was cooking, I chopped up some of our favourite vegetables including asparagus and tenderstem broccoli plus some Jersey Royal potatoes.

After 15 minutes, I layered the chicken with Parma ham and the provolone cheese and put back in the oven until the chicken was cooked.

Meanwhile, I boiled the potatoes and steamed the veg.

It again was delicious and we both enjoyed the meal. The strong cheese worked well with the Parma ham and again the cheese melted perfectly.

I would definitely use this cheese again in my cooking, I think it would be great on homemade pizzas with the kids! Auricchio Provolone Cheese will be on offer via the Ciao Gusto shop this August, any 3 for £6.
